Longanisa – (lon-ga-NEE-sa) Filipino pork sausage – THE national sausage of the Philippines (correct me if I am wrong, but it may be mentioned in the Philippine National Anthem). We make these savory sweet patties from scratch with a secret blend of spices, garlic, pineapple, and sugar. Damn is right.
Adobo – (uh-DÔ-bo) uh.. yeah! - the defining dish of the Philippines (the turkey of Thanksgiving, the Mickey of Disney, the Elvis of Rock n Roll). We sauté your choice of chicken or tofu in a special mixture of vinegar, soy sauce, and oyster sauce making this a tangy savory dish of absolute magic.
Atsara – (AT-sa-ra) Pickled Papaya Relish (like sauerkraut but sweeter and spelled differently). We make ours by pickling papaya, cabbage, pineapple, and ginger and pair it with our magic Adobo.
